Gluten Free and Dairy Free Mexican Style Casserole

Prep Time: 20 minutes

Cook Time: 40 minutes

I HAD to share my meal prep for this week. It was so delicious, I ate it faster than I could take a picture. I used this existing recipe I found on Pinterest but modified it to be gluten free, dairy free, and fit my dietary needs.

You will need:

  • 1 lb. ground beef (this time I used 85/15, but I usually use 90/10)
  • 1 green pepper diced
  • 1 orange pepper diced
  • 1 red pepper diced
  • 1 bag of Daiya Dairy Free Mexican blend cheese
  • Trader Joe’s Chili Lime Seasoning
  • 1 cup of rice (uncooked)

I followed the recipe tagged above, but these are the steps I took:

  1. Heat oven to 375ºF.
  2. Brown meat in large nonstick skillet; drain. Return meat to skillet.
  3. Reserve 1 cup cheese for later use. Add remaining cheese and all remaining ingredients to meat; mix well.
  4. Spoon into 13×9-inch baking dish sprayed with cooking spray; cover.
  5. Bake 40 to 50 min. or until rice is tender. Top with reserved cheese; bake, uncovered, 5 min. or until melted.

I got about 4 meals out of this dish, perfect for the week and so easy to make.

Comment below if you make it, and let me know what you think.

Who else is obsessed with the beach as I am?

Even thought I’m pale as F*ck, I love the ocean. I love walking in the sand, the fresh small, the sounds of the waves, and the salt water.

But, the beach isn’t fun unless you have the right gear! Here are my necessities I always have with me!

My sand cloud Gear!

Sand Cloud makes amazing towels, but they also have cute clothes and eco friendly gear! When I’m at the beach I always have my towels with me but also one of their long sleeve tees! I like to bring a long sleeve tee with me to put on when I feel I’ve gotten too much sun, or just need a break. If you follow me on Instagram, you’ve seen me post my glass water bottle from them. If you are interested in checking them out, use my code taygreeleyblog058 and you will get 15% off.

Zenni optical prescription glasses

I can’t see distances very well, there a little foggy- I have no idea if that is near or far sighted lol. I have a light prescription but I also have very light blue eyes so the sun isn’t my friend. I was able to get a pair of customized Zenni Optical glasses for Under $50, and if you have a prescription you know that’s not expensive at all!

You don’t have to have a prescription to shop there. They have a ton of frames and you can customize however you would like.

Neutrogena Hydro Boost SPF 50

I don’t play around when it comes to my sun care. I will still get freckles with SPF 50 and Neutrogena’s products have helioplex broad spectrum. I have done a tone of research and this is one of the best. I try to go natural with most products, but I also want what is going to protect me best!

Hello Sunshine Sun Hat

Invest in a good sun hat, they seriously come in handy especially when you feel your face and shoulders are getting a little too much sun. If I don’t bring this one with me, I usually have my Sand Cloud shark fin hat. Now they have a whale tail!

I usually bring some other stuff with me, but these are the essentials. Comment below what your favorite beach in MA is so I can try it out!
